Mapping out the Wine World - Surveying the wine world with a digital nose

24 winemakers and sommeliers were highly focused at our wine tasting "Mapping out the Wine World" on 21.07.2022 and put their human noses at the service of science.

The experts analyzed 48 wines from all over the world in order to train a "digital nose" with these results and prepare it for its work. The PINOT project at the Wine Campus is researching the use of digital noses to analyze the quality of wine (PINOT research project: https://pinot-ai.com)

The aim is to develop an AI-supported technology for identifying valuable wine aromas and off-flavors, which should enable widespread use by winemakers, sommeliers and retailers through a practical, cost-effective and easy-to-use solution. The aim is to reflect human sensory impressions such as taste, aroma and appearance as accurately as possible.

Data was collected yesterday for the first time for the primary calibration of the innovative device, which can be used to train the digital nose.

The second round of wine tasting will take place in November, when the experts will collect data on off-flavors in the wine.

We would like to thank all the experts and project partners who have contributed their time and expertise to support our research project.
