Main research areas
Microorganisms play a central role in winemaking, be it in alcoholic fermentation by yeasts or malolactic fermentation by lactic acid bacteria. At the same time, various harmful organisms can have a negative impact on the wine's ingredients in almost all phases of production. Microbiological analysis combined with modern molecular biological diagnostics is therefore an important focus of research.
