  • Linking sensory analysis and aroma chemistry in order to develop structural relationships between the value-giving ingredients of wines and their sensory characteristics.

 

  • Optimization of red wine production processes with regard to the polymerization of phenols for colour stabilization and sensory maturation of tannins.
