Ilimitado liqueur wine
NEO
The trio is completed by the NEO Ilimitado liqueur wine. This is a classic grape variety cuvée made from selected grapes. The grape varieties are typical of wine-growing regions in southern, western and central Europe, but also thrive in our mild Palatinate climate. An exchange student from Porto was involved in the production process and taught us the traditional Portuguese method of making port wine, grape crushing. The mash was processed three times a day for 20 minutes each time using this punch-down method. As is usual with a liqueur wine, the must was "spiked" with high-proof wine distillate during fermentation, in this case with a grape spirit, which stops the fermentation and ensures that the liqueur wine retains a high alcohol and residual sugar content. The selection of grape varieties, the cross-border team and the style of the wine give the NEO liqueur wine its name Ilimitado (Portuguese: "limitless").
NEO Ilimitado has a good tannin structure and excellent ageing potential. On the nose, it has strong aromas of plum, strawberry and violet as well as a hint of clove and cinnamon.
